Vineyards: Pergola Veronese training system with 25 years old vines, located at San Pietro in Cariano, inside the Valpolicella D.O.C area.
Technique: The traditional Valpolicella’s red grapes are softly pressed, destemmed, and then submitted to a maceration with the skins for 12 days.
It’s essential that the fermentation temperature of this new wine don’t exceed the 22°C, in order to obtain, in addition to its strong typical character, also the distinctive floral and fruity perfumes.
Aging: 24 months in French oak and then 6 months into bottles.
Grape variety: 65%: Corvina + 20%: Rondinella + 10% :Corvinone
Colour: An intense ruby red colour with garnet reflections.
Perfume: A vinous and delicate perfume of fresh fruit.
Taste: Fresh and dry.
Serving temperature: 18°C (uncork it a few minutes before consuming).
Recommended pairings: A wine suited to all courses thanks to its smoothness and digestibility.
Acidity: 5,5 g/l – pH 3,2
Sugars: 5,3 g/l
Reduced extract: 22 g/l
Alcohol content: 14 %
